Most gardeners think of winter as the off-season, the time when the garden is put to bed and the seed catalogs come out for next year’s planning. For years I thought the same way. Then I planted a row of kale in late summer on a whim, ignored it through fall, and went out one January morning to find it still alive, still green, and sweeter than any kale I had tasted in summer. That was the end of my off-season.
A winter garden is not the same as a summer garden stretched into cold weather. It is a different way of growing, built around plants that tolerate cold and a calendar that runs in reverse, planting in late summer for harvest in winter. It works in more climates than people think, including places with real winters, if you understand the principles and choose the right crops.
This is a guide to planning and growing a winter vegetable garden, from crop selection to frost protection to the timing that makes it all work.
The Core Principle: Growth Stops in Winter
The most important thing to understand about winter gardening is that plants do not grow in winter, not in any meaningful sense. Once temperatures drop and day length falls below 10 hours, plant metabolism slows to a crawl. A kale plant in January is not growing. It is surviving, holding the leaves it grew in fall, and you are harvesting from that stored growth.
This means the winter garden is actually a fall garden, planted in late summer and early fall, grown to harvestable size before growth stops, and then held in the garden through winter for harvest as needed. You are not growing in winter. You are storing in the garden, which turns out to be a remarkably good way to keep vegetables fresh.
The Persephone Period
Eliot Coleman, the market gardener who wrote extensively about winter growing, calls the period when day length is under 10 hours the “Persephone period,” named for the Greek myth. During this time, which varies by latitude but typically runs from mid-November to late January in the northern United States, plant growth essentially stops. You cannot start a new crop in this period and expect it to grow. You can only harvest what is already established.
This means all your winter crops must reach harvestable size before the Persephone period begins. In zone 6, that means planting by mid-September for most crops. In zone 8, you have until October. In zone 4, you need to be planting in August and using protection.
What Grows Through Winter
Not every vegetable can survive cold. Tomatoes, peppers, squash, and beans are dead at the first frost. The winter garden is built around cold-hardy crops, most of them in the brassica, chicory, and leafy green families.
The Most Cold-Hardy Vegetables
These are the plants I rely on for winter harvest, ranked roughly by cold tolerance:
- Kale. The champion. Most varieties survive to 10 degrees unprotected, and lower with row cover. ‘Winterbor’ and ‘Lacinato’ are both excellent. Flavor improves after frost, as cold converts starches to sugars.
- Collards. Almost as tough as kale. Survives into the teens unprotected.
- Mache, also called corn salad. A small rosette of tender leaves that survives to 0 degrees unprotected. The most cold-tolerant salad green. Grows slowly but reliably through winter.
- Spinach. Survives to 0 degrees or lower with protection, and often survives unprotected in mild zones. Plant in fall for winter harvest and again in late winter for early spring.
- Carrots. Survive in the ground through winter in most zones with a thick mulch. The cold converts starches to sugar, and winter carrots are the sweetest you will eat.
- Leeks. Very cold hardy. ‘Bandit’ and ‘Tadorna’ are reliable winter varieties. Harvest through frozen ground with a fork.
- Parsnips. Like carrots, they survive winter in the ground and sweeten with cold. Often left to harvest in early spring before they resprout.
- Brussels sprouts. Survive into the teens and improve after frost. The sprouts are sweeter after cold.
- Cabbage. Late-planted storage varieties survive light frost and hold in the garden for weeks.
- Swiss chard. Survives to about 20 degrees unprotected, lower with cover. ‘Bright Lights’ and ‘Fordhook’ both work.
- Arugula and mustard greens. Survive to the mid-20s unprotected, lower with cover. Spicier in cold weather.
- Claytonia, miner’s lettuce. A winter salad green that thrives in cold, wet conditions. Survives to 0 degrees.
Less Hardy but Useful With Protection
- Lettuce. Most varieties survive to about 25 degrees unprotected. With row cover, they survive to 15 degrees. ‘Winter Density’ and ‘Marvel of Four Seasons’ are cold-tolerant heirlooms.
- Radishes. Survive light frost but not hard freeze. Harvest before the ground freezes solid.
- Turnips and rutabagas. Survive light frost and hold in the ground into early winter in most zones.
- Cilantro, parsley, and sorrel. Survive with protection, providing fresh herbs through winter.
What Will Not Survive
Tomatoes, peppers, eggplant, squash, cucumbers, melons, beans, corn, basil, and most warm-season crops. Do not try. These are killed by frost and cannot be protected through real winter without a heated greenhouse.
The Planting Calendar
This is the part that trips people up, because winter crops are planted in summer, when you are not thinking about winter. You have to plan backward from when you want to harvest and when growth stops.
Counting Back From First Frost
Your first fall frost date is the anchor for winter planting. Most winter crops need 6 to 10 weeks of growing time before frost and the Persephone period, to reach harvestable size. Plant them too late and they are too small to survive winter. Plant them too early and they may bolt or get tough.
A Planting Schedule for Zone 6
This is a representative schedule for zone 6, where first frost is around mid-October and the Persephone period runs from mid-November to late January. Adjust earlier for colder zones, later for warmer.
Late June to mid-July: – Brussels sprouts, as transplants – Fall cabbage, as transplants – Leeks, if not already started – Carrots for winter, direct sow – Parsnips, direct sow, though these are often sown in spring
Late July to early August: – Kale, direct sow or transplant – Collards, transplant – Swiss chard, direct sow – Fall lettuce, first succession – Radicchio and endive, direct sow
Mid to late August: – Spinach, direct sow – Arugula and mustard greens, direct sow – Lettuce, second succession – Radishes, direct sow – Turnips, direct sow – Cilantro, direct sow
September: – Spinach, second sowing for early spring harvest – Mache, direct sow – Claytonia, direct sow – Lettuce, final succession, under cover – Garlic, plant cloves for next summer’s harvest
The later plantings, September spinach and mache, will not reach full size before winter. That is fine. They survive as small plants and resume growth in late winter, providing the earliest spring harvest.
Adjusting for Your Zone
- Zones 3 to 4: Shift everything 3 to 4 weeks earlier. Use row cover and cold frames for everything. Some crops will need a greenhouse or polytunnel.
- Zone 5: Shift 2 to 3 weeks earlier. Row cover recommended for all winter crops.
- Zones 7 to 8: Shift 2 to 3 weeks later. Many crops survive unprotected.
- Zones 9 and above: Winter is the primary growing season. Plant in fall and harvest through winter without protection. Summer is the off-season.
Frost Protection: Row Covers and Cold Frames
In zones 6 and colder, most winter crops need protection to survive. Protection does two things: it buffers the extreme cold, and it prevents the wind from desiccating the leaves. Even a few degrees of protection can be the difference between a plant that survives and one that dies.
Floating Row Cover
The simplest protection. A lightweight fabric draped over hoops or directly on the plants. Row cover comes in different weights:
- Lightweight, 0.5 oz per square yard. Protects to about 28 degrees. Mainly for insect exclusion and light frost.
- Medium weight, 1.0 oz. Protects to about 24 degrees. Good for fall and spring extension.
- Heavy weight, 1.5 to 2.0 oz. Protects to about 20 degrees. The choice for winter. Blocks more light, so plants grow slower, but survival is much better.
For winter use, use the heaviest row cover you can find, supported on hoops to keep it off the plants. The air gap between the fabric and the plants provides insulation. Seal the edges to the ground with soil or boards so wind does not get underneath.
Row cover extends the growing season by about one zone, maybe a zone and a half with the heavy weights. A zone 6 garden with heavy row cover performs like a zone 7 or 8 garden.
Cold Frames
A cold frame is a low box with a transparent top, traditionally an old window, set over plants. The top traps solar heat during the day, and the box holds it at night. A well-built cold frame can keep plants 10 to 15 degrees warmer than the outside air, which is enough to grow greens through winter in zone 5 and even zone 4.
The catch with cold frames is ventilation. On a sunny winter day, the inside can reach 80 degrees or more, even when it is freezing outside. You have to prop the top open during the day or the plants will cook. Close it in late afternoon to trap heat for the night.
This daily attention is the main drawback of cold frames. A row cover does not need venting. A cold frame does.
Low Tunnels
A hybrid between row cover and cold frame. Hoops of wire or PVC pipe supporting a layer of plastic, like a miniature greenhouse. Low tunnels provide more protection than row cover alone, because plastic traps more heat, and they can be vented by opening the ends.
For serious winter growing, a low tunnel with plastic over hoops, with a layer of row cover underneath for extra insulation on the coldest nights, is the most protection you can get without building a greenhouse.
High Tunnels and Greenhouses
These are permanent structures tall enough to walk in. They provide the most protection and the longest season, but at significant cost. A home greenhouse runs 500 to 5000 dollars depending on size and quality. A high tunnel, also called a hoop house, is cheaper, 2 to 5 dollars per square foot for a DIY build, and unheated, relying on solar gain alone.
If you are serious about winter growing and have the budget, a high tunnel is transformative. It moves your garden two zones warmer and lets you grow through winter in climates where outdoor winter growing is not possible.
Mulching for Winter Root Crops
Carrots, parsnips, beets, and turnips can be left in the ground through winter if the ground does not freeze solid. The trick is a thick layer of mulch, 6 to 12 inches of straw or leaves, applied after the soil cools but before it freezes hard. The mulch insulates the soil and prevents it from freezing, so you can keep harvesting roots through winter.
The downside is that you have to dig through the mulch to harvest, which is a chore in winter. And if the ground does freeze, the roots are locked in until spring. But if your winters are not too severe, mulched roots are a low-effort winter storage method.
Harvesting in Winter
Winter harvest requires a different approach. Plants are not growing, so every leaf you take is a leaf that is not replaced. You have to harvest conservatively, taking a few leaves from each plant rather than stripping it, so the plant has enough foliage to continue photosynthesizing on sunny days and to survive the cold.
Kale and collards can be harvested leaf by leaf through winter. Take the lower leaves and leave the growing center. Spinach and chard the same. Lettuce is a cut-and-come-again crop, take the outer leaves and leave the center.
Root crops are harvested as needed. Pull a carrot, leave the rest. The ground is the storage, and the mulch keeps it accessible.
The Sweetness of Cold
One of the rewards of winter growing is flavor. Cold converts starches to sugars in many crops, acting as a natural antifreeze in the plant’s cells. Kale, Brussels sprouts, carrots, parsnips, and spinach are all noticeably sweeter after frost than they are in summer. A winter carrot pulled from mulched ground in January tastes like a different vegetable than a summer carrot.
This is the real case for winter gardening, beyond the practicality of fresh food in cold months. The food tastes better. The cold does what cooking cannot.
What to Do When It Is Too Cold
In a severe cold snap, even protected crops can be damaged. A few strategies:
- Double cover. Add a second layer of row cover over the first for the duration of the cold snap.
- Harvest before the cold. If a severe cold event is forecast, harvest what you can and bring it inside. Greens will keep in a plastic bag in the refrigerator for a week or more.
- Water before the cold. Wet soil holds more heat than dry soil. Watering a day before a cold snap can raise the soil temperature slightly and help plants survive.
- Accept some loss. In extreme cold, some plants will die. That is the risk of winter gardening. Plan for it by planting more than you need.
Planning the Winter Garden
If you want to try a winter garden, start small. Pick three or four crops, kale, spinach, carrots, and mache would be my choices, and dedicate one bed to them. Plant on schedule in late summer. Put up a row cover on hoops. See what survives and what does not.
The first year is a learning curve. You will plant some things too late and some too early. You will lose some crops to cold you did not expect. You will also harvest fresh greens in January, which is a genuinely remarkable thing if you have never done it.
By the second year, you will have a sense of what works in your climate and your garden. By the third year, you will have a winter garden that produces reliably, and you will wonder why you ever thought winter was the off-season.
Choosing Your Level of Protection
The amount of protection you need depends on your climate and your ambition. Here is a practical guide to what works where:
Zones 8 and Above: Minimal Protection
In mild-winter climates, most cold-hardy crops survive winter with no protection at all. Kale, spinach, chard, carrots, and leeks grow right through the winter. A row cover helps during occasional cold snaps but is not essential. The main challenge is not cold but rain, which can rot crops in poorly drained soil.
Zones 6 to 7: Row Cover or Cold Frame
This is the sweet spot for home winter gardening. Heavy row cover on hoops extends the season dramatically. Cold frames work for small plantings. Low tunnels with plastic are even better. With these protections, you can harvest fresh greens from October through March.
Zones 4 to 5: Cold Frame or High Tunnel
Winter growing requires more serious protection. A cold frame is the minimum, and a high tunnel or unheated greenhouse is better. Crops survive but do not grow during the deepest winter. The harvest is mainly holding crops for picking rather than active growth.
Zones 3 and Below: Heated Structure
True winter growing in zones 3 and below requires a heated greenhouse. Cold-hardy crops can survive in high tunnels, but growth is minimal and the risk of loss is high. For most gardeners in these zones, the realistic approach is to extend the fall season as long as possible and accept a true winter off-season.
The Economics of Winter Growing
Is a winter garden worth the cost of the protection? The answer depends on how you value fresh food in winter and how much you would otherwise spend on imported produce.
A simple row cover setup for a 4 by 8 foot bed costs about 30 to 50 dollars and lasts 2 to 3 seasons. That bed can produce 5 to 10 pounds of fresh greens per month through winter, worth 20 to 40 dollars at farmers market prices. The row cover pays for itself in the first season.
A cold frame costs 50 to 200 dollars depending on whether you build or buy, and lasts decades. A high tunnel costs 300 to 1,000 dollars for a DIY build and changes what you can grow through winter. These are larger investments that pay back over years.
The real value, though, is not measured in dollars. It is measured in the experience of harvesting fresh kale in January, of pulling sweet carrots from mulched ground in February, of having something alive and growing in the garden when everything else is dormant. That experience is worth more than the cost of the materials.
Record-Keeping for Winter Gardening
Winter gardening rewards good records. Because the planting happens months before the harvest, and because the timing is tight, you need to remember what you planted, when, and how it performed. Without records, you repeat the same mistakes.
Keep a simple garden journal. For each winter crop, note: – The variety – The planting date – The first harvest date – How much it produced – When it bolted, died, or finished – What you would change next year
After two or three seasons, you will have a customized planting calendar for your specific garden that is more accurate than any generic guide. You will know exactly when to plant kale in your yard for a January harvest, because you have done it and written down the result.
The Year-Round Garden
The ultimate goal of winter gardening is a garden that produces every month of the year. This is possible in more climates than people think, with the right crop selection and protection. The pattern looks something like this:
- Spring, March through May: Overwintered spinach and mache, early radishes and lettuce, asparagus, last of the stored roots.
- Summer, June through August: The familiar warm-season crops, tomatoes, squash, beans, plus successions of lettuce and greens.
- Fall, September through November: Late tomatoes and peppers, winter squash, potatoes, storage onions, first of the fall-planted greens.
- Winter, December through February: Kale, collards, spinach, mache, carrots, parsnips, leeks, all under protection.
Every month has something to harvest. The garden is never empty, and the table is never without something homegrown. That is the payoff of winter gardening, and it is worth the planning and the cold fingers.
