A friend mentioned winter sowing to me years ago, and I dismissed it as a gimmick. Starting seeds outside in the middle of January seemed pointless when I had a perfectly good shelving unit with grow lights in my basement. What I did not understand was that winter sowing does not replace indoor seed starting. It replaces the hardening-off process, saves electricity, and produces seedlings that are tougher and better adapted to outdoor conditions than anything grown under lights. After one season of trying it, I was hooked.
Winter sowing works by creating a protected microclimate inside a translucent container. The container traps solar heat during the day, holds warmth through cold nights, and shields seeds from wind, rain, and foraging animals. Seeds experience natural cold stratification and germinate when conditions are right, which means the plants emerge on nature’s schedule rather than on an artificial one you have to manage. The seedlings grow stocky and strong because they receive real sunlight from day one.
This method was popularized by Trudi Davidoff, who coined the term and developed the technique for gardeners without indoor seed-starting space. The beauty of winter sowing is its simplicity. You need no special equipment, no grow lights, no heat mats, and no daily attention. You sow the seeds, put the containers outside, and wait. The containers do the work.
Gathering and Preparing Your Containers
The container is the heart of the winter sowing system. You are looking for translucent or clear plastic vessels that are deep enough to hold three to four inches of potting soil and tall enough to leave headroom for seedlings to grow. The most common choices are gallon milk jugs, clear soda bottles, takeout containers with clear lids, and plastic produce clamshells. I have used all of these, and milk jugs remain my favorite because they are free, durable, and easy to prepare.
Start by cleaning your containers thoroughly. Residue from milk or juice can harbor bacteria and mold that kill seedlings. Wash each container with hot soapy water, rinse well, and let it dry. If you are reusing containers from a previous season, soak them in a mild bleach solution (one part bleach to nine parts water) for ten minutes to sterilize them, then rinse and dry.
Preparing a milk jug takes about two minutes. First, remove the cap and discard it. The open top becomes the ventilation hole that prevents heat buildup on sunny days. Second, use a utility knife or sharp scissors to cut around the jug about four inches from the bottom, leaving a one-inch section uncut to act as a hinge. The top half folds back like a clamshell for sowing and taping shut afterward. Third, poke four to six drainage holes in the bottom using a heated screwdriver or a skewer. Without drainage holes, water collects and drowns the seeds.
Clear soda bottles work the same way. Cut around the middle, leaving a hinge, and poke drainage holes in the bottom. The narrow neck of a soda bottle provides natural ventilation, so you do not need to remove the cap. Some winter sowers leave the cap on during the coldest weeks and remove it as temperatures rise in spring. I remove caps from all my containers from the start because overheating on a sunny February afternoon is a bigger risk than cold damage.
Produce clamshells are convenient because they already have hinged lids. The challenge with these is that many are shallow, which limits root development. Look for the deep clamshells used for salad greens or bakery items. Poke drainage holes in the bottom and ventilation holes in the lid. These containers work well for shallow-rooted crops like lettuce and herbs but are less suitable for deep-rooted seedlings like tomatoes.
Whatever container you choose, label it before sowing. I write the crop name, variety, and sowing date on a vertical strip of plastic cut from an old yogurt container, using a paint pen that resists fading. Paper labels disintegrate by spring. Popsicle sticks rot. Plastic labels survive the winter and remain readable when you are trying to identify fifty different jugs in March.
Fill each prepared container with three to four inches of moistened potting soil. I use a standard soilless mix containing peat or coco coir, perlite, and compost. Garden soil is too heavy and compacts under repeated freezing and thawing. Wet the mix before filling so that it holds together when squeezed but does not drip water. Pack it lightly and level the surface.
Choosing the Right Seeds for Winter Sowing
Not every seed belongs in a winter sowing container. The method works best for plants that naturally self-sow in cold climates or that require cold stratification to germinate. Tropical and subtropical plants like tomatoes, peppers, and eggplant need consistent warmth that a winter sowing container cannot provide during the coldest months. Save those for indoor starting or for very late winter sowing when spring is approaching.
The crops I sow in winter containers fall into three groups.
Hardy vegetables that tolerate frost and germinate in cool soil. This group includes spinach, kale, collards, cabbage, broccoli, Brussels sprouts, lettuce, arugula, mizuna, peas, radishes, turnips, and parsnips. These seeds can go into containers in December or January and will germinate as soon as conditions allow, often producing seedlings weeks ahead of direct-sown crops.
Hardy annual flowers that self-sow or benefit from cold stratification. Larkspur, snapdragons, calendula, cornflower, poppies, nigella, bachelor buttons, and sweet peas all germinate better after exposure to cold. Sowing them in winter containers mimics the natural cycle and produces stronger, earlier bloomers than spring-sown seed.
Perennials and hardy herbs that need cold to break dormancy. Lavender, echinacea, rudbeckia, lupine, milkweed, yarrow, catmint, chives, and parsley all germinate at higher rates after a cold period. These are some of the most rewarding winter sowing candidates because they are notoriously slow and erratic when started indoors.
I avoid sowing warm-season crops like tomatoes, peppers, basil, zinnias, and marigolds in midwinter containers. These seeds rot in cold wet soil or germinate so late that the plants never catch up. If you want to winter sow these crops, wait until March or April when the containers warm up significantly on sunny days. Even then, indoor starting under lights will give you earlier, more reliable results for heat-loving plants.
Here is a quick reference for sowing timing based on seed type:
- December through February: Hardy vegetables, hardy annuals, perennials, cold-stratification herbs
- March: Semi-hardy vegetables and flowers (lettuce, Swiss chard, calendula, alyssum)
- April: Warm-season vegetables and flowers (tomatoes, peppers, zinnias, marigolds, basil) if you are using winter sowing instead of indoor lights
The number of seeds you sow per container depends on the crop. I sow densely for leafy greens and herbs, scattering seeds about a half inch apart. For vegetables that produce larger transplants like cabbage and broccoli, I sow six to eight seeds per jug so each seedling has room to develop. For flowers, I sow sparingly to avoid overcrowding, since flower seedlings transplant best when they have space to grow sturdy stems.
Sowing Timing by Hardiness Zone
The question I hear most often is when to put containers outside. The answer depends on your hardiness zone and the type of seeds you are sowing. The general principle is that hardy seeds can go out any time after the winter solstice, while less hardy seeds should wait until later.
In zones 3 through 5, winter arrives early and stays long. You can start putting containers out in late December or January. The seeds will sit dormant through the deep cold and germinate as the days lengthen in March and April. Gardeners in these zones benefit most from winter sowing because the short growing season makes early transplants valuable.
In zones 6 and 7, where I garden, January through February is the prime window for hardy seeds. I put out my first jugs around New Year’s Day and continue sowing through February. By late February, some containers already have germinated seedlings, particularly lettuce and spinach sown in early January.
In zones 8 and 9, winter is mild enough that seeds sown too early may germinate during a warm spell and then get zapped by a subsequent freeze. Gardeners in these zones should wait until February for hardy seeds and March for semi-hardy ones. The risk is not cold killing the seeds but rather seedlings emerging too early.
In zone 10 and warmer, winter sowing as practiced in colder zones is less relevant because winter temperatures rarely drop below freezing. Gardeners in these regions can use the technique during their coolest months for crops that need a cold period, but the main growing season operates on a different calendar entirely.
Where you place the containers matters as much as when you sow them. Choose a spot that receives full sun and is protected from strong winds. The south side of a house or shed is ideal because the wall reflects heat and blocks cold north winds. I line my containers up against the south foundation of my house, where they get sun from morning until late afternoon and benefit from radiant heat from the foundation.
Avoid placing containers under eaves where rain cannot reach them. The containers need natural precipitation to keep the soil moist. I check my containers every two weeks during winter and add water if the soil looks dry, but most of the time, rain and snow provide adequate moisture. The open top of a milk jug allows precipitation in while the sides block wind and retain warmth.
Snow on top of your containers is not a problem. Snow acts as insulation and actually protects seeds from the coldest temperatures. I have had containers buried under six inches of snow for weeks, and the seeds inside germinated perfectly once the snow melted. Do not shovel snow off your containers. Let nature take its course.
Caring for Containers Through Winter and Early Spring
Once your containers are sown and placed outside, winter sowing enters its lowest-maintenance phase. From January through March, I do almost nothing. The containers sit in the sun, the seeds experience cold, and I wait. I check occasionally to make sure soil has not dried out, but beyond that, the system runs itself.
Things get interesting in March and April when seeds start germinating. The first sign is usually a faint green haze on the soil surface. Within days, true leaves appear and the seedlings begin growing rapidly in the lengthening daylight. This is when you need to start paying attention.
The biggest risk in spring is overheating. A sealed milk jug in full sun can reach 100 degrees internally on a March afternoon, even when the outside temperature is only 50 degrees. Seedlings that survive freezing can cook in a closed container. Once you see germination, prop the lid open slightly during the day to allow heat to escape. I use a small stick wedged in the hinge to hold the top open an inch or two. Close the lid at night to retain warmth.
Watering becomes important once seedlings are actively growing. The small soil volume in a container dries out faster than garden soil. Check daily once temperatures regularly exceed 50 degrees. Water gently with a spray bottle or a watering can fitted with a fine rose to avoid dislodging seedlings. The soil should stay moist but not saturated.
As spring progresses, gradually open the containers wider. By the time nighttime temperatures stay above 40 degrees, you can remove the lids entirely during the day. This begins the acclimation process that indoor-grown seedlings require through laborious hardening-off routines. Winter-sown seedlings acclimate naturally because they have been exposed to outdoor conditions from the start.
Watch the weather for late freezes. If temperatures are forecast to drop below 28 degrees and your seedlings are actively growing, cover the containers with a blanket or close the lids for the night. Mature winter-sown seedlings tolerate frost well, but newly emerged seedlings can be damaged by a hard freeze. A few minutes of protection on cold nights is all that is needed.
Transplanting Seedlings into the Garden
The payoff for winter sowing arrives when you transplant seedlings into the garden. Because the plants have grown in outdoor light and temperatures, they suffer none of the transplant shock that plagues indoor-grown seedlings. You can move them directly into the garden without a weeks-long hardening-off process.
I transplant when seedlings have two to four sets of true leaves and have filled the container with roots. For hardy crops sown in January, this usually means transplanting in late March or early April. For March-sown crops, transplanting happens in May.
The day before transplanting, water the containers thoroughly. Well-hydrated seedlings survive transplanting better than dry ones. Choose a cloudy day or transplant in late afternoon to reduce stress from sun exposure.
To remove seedlings, open the container and gently lift the soil block. I use a butter knife to slide under the root mass and lift it out in one piece. Separate seedlings by gently teasing apart the roots, keeping as much soil around each root ball as possible. Some gardeners transplant in clumps and thin later, which reduces root damage. I use this method for lettuce and spinach, planting clusters of three or four seedlings every six inches and harvesting the extras as baby greens.
Plant seedlings at the same depth they grew in the container, with two exceptions. Tomatoes and Brassicas (cabbage family) can be planted deeper than they grew, burying the stem up to the first true leaves. The buried stem develops roots, producing a sturdier plant. This trick works for winter-sown seedlings just as it does for indoor-grown ones.
Water transplants immediately and keep the soil moist for the first week. A dilute seaweed or kelp solution applied at transplanting reduces shock and encourages root growth. I use this on every transplant, winter-sown or otherwise, and the difference in establishment is noticeable.
Protect newly transplanted seedlings from pests. Slugs and cutworms love tender transplants and can decimate a row overnight. I sprinkle crushed eggshells or diatomaceous earth around each plant and use cutworm collars made from cardboard tubes for the first week. Row cloth draped over transplants provides protection from both pests and late cold snaps.
One advantage of winter-sown seedlings that surprises many gardeners is their root development. Because the seedlings grow in outdoor conditions with natural light and air movement, they develop shorter, sturdier stems and more branched root systems than indoor-grown seedlings that stretch toward artificial light. When you transplant a winter-sown seedling, you are working with a physically tougher plant that establishes quickly. I have compared winter-sown and indoor-sown lettuce planted on the same day, and the winter-sown plants always catch up faster and show less transplant shock.
A common mistake new winter sowers make is sowing too many seeds in each container. Dense sowing produces crowded seedlings that compete for light and nutrients, resulting in weak, spindly transplants. For most crops, a dozen seeds per milk jug is plenty. If you need more plants, start another container rather than cramming more seeds into one. The extra containers cost nothing, and the seedlings will be stronger for having adequate space.
Another mistake is waiting too long to transplant. Seedlings left in their containers past the ideal transplanting stage become rootbound and stressed. Once roots circle the bottom of the container and seedlings start leaning toward the sun, they need to go in the ground. Check containers weekly once germination begins, and have your garden beds prepared so you can transplant as soon as seedlings are ready.
Winter sowing has transformed how I start seeds. I still use grow lights for tomatoes and peppers, because I want those seedlings ready by early May. But for everything else, from spinach to snapdragons to echinacea, winter sowing produces better plants with less effort. The containers cost nothing, the method requires no daily attention, and the seedlings are rugged and ready for the garden. If you have been intimidated by seed starting, winter sowing is the gentlest entry point I know. Gather some milk jugs this December, fill them with soil and seeds, and let winter do the work.
