Plant edibles at reachable heights and in accessible configurations. A raised strawberry bed at 30 inches lets a seated visitor pick fruit without bending. A row of lowbush blueberries along a paved path provides a continuous snack line at wheelchair height. Cherry tomatoes on a determinate bush, not a sprawling indeterminate vine, put fruit within easy reach and ripen over a long window. Herbs in raised planters invite pinching and tasting, and many, like chives, oregano, and thyme, recover quickly from repeated harvest.

Fruit trees bring taste to the vertical plane. Dwarf apple, pear, and peach varieties on semi-dwarfing rootstock stay under 10 feet and bear fruit at picking height. Paths should be firm, level, and at least 36 inches wide for wheelchair passage, 60 inches where two chairs need to pass. Grades should not exceed 5 percent, or one inch of rise per 20 inches of run. Surfaces should be stable and slip-resistant, which rules out loose gravel and mulch for primary routes, though these materials work well in secondary sensory paths designed for foot traffic.

Rest areas spaced every 50 to 100 feet give visitors a place to pause, and seating at multiple heights accommodates different needs. Avoid brick with wide sand joints, which catch cane tips and wheelchair casters, and avoid any surface that becomes slippery when wet.

Consider how the garden sounds, smells, and feels at different times of day. Morning brings bird activity and dew-cooled fragrance. Midday brings heat that releases scent from pavement and stone. Evening brings cooling air that carries fragrance differently and shifts the pollinator population to moths and bats. A garden visited only at one time of day is half experienced. Build in reasons to return at different hours, a morning bench in the herb garden, an evening seating area near night-blooming plants, and the sensory engagement deepens with repeated visits.

The most successful sensory gardens evolve over years, not seasons. Start with a framework of paths, raised beds, and a water feature, then fill in plants as you learn what works in your climate and what your visitors respond to. Some elements will surprise you.
